Our Place & NAme
When we found this little spot nestled in Coombsville, or should we say it found us, it seemed hard to believe. Despite being a scruffy little knoll at the time, it’s a place where the air smells a little better, birds sing a little louder, and rainbows appear more often.
The right kind of messy is cherished. Accidental elements give elegance. The surrounding beauty stems from age.
Welcoming life’s cycle and embracing the imperfections that come with this progression, it seemed only fitting to acknowledge the Japanese Wabi-Sabi concept in the naming of our wine, Sabi Knoll.
If we can share even the tiniest slice of this with you through our wine and our work, well that would be something.
OUR Wine
Our wine is a collaborative effort among our neighbors who share the common interest of doing good and doing right. It’s only from earnest work, the wisdom that emanates from time and experience, and some help from mother nature, that allows the Coombsville fruit to transform into a glass of heavenly nectar. Of course, science, art, and terrior play a large role as well. Yet the special attention, and compassion at each step to our wine, from the vineyard to the cellar, is necessary to cultivate and enlighten your experience with our Sabi Knoll wine.
Without the fruit from our benevolent neighbors, Sandy and Sean Thomas, combined with the exceptional talent from winemaker, Steve Reynolds, and his cellar team led by Arturo Irucuta, our passion would only remain a dream. With our dream coming true, allows us to share great wine with you.
